Looking back on the last three months, the specific brands mattered less than the system. What was best practice for kitchen equipment procurement in 2020 doesn’t necessarily cut it in 2025—the technology, the certifications, and the expectations have all moved. But the fundamentals haven’t: verify the spec, write down the decision, train the people who’ll use it.
I saved us from one bad coffee maker purchase, but only because I’d been burned by three cheap ones first. The “budget vendor” choice looked smart until we saw the quality up close. Replacing them cost more than the original “expensive” quote would have. That pattern hasn’t changed in four years—and I doubt it ever will.
